Cheeseburger in a Bowl - Hold the bun please
Cheffing up burgers tonight! No need to fire up the grill. Yes, that's lettuce and tomato. AND mustard! This taste just like that cheeseburger we get at the burger place with the big W! The Mr. said if I had asked him if he wanted lettuce and tomato with his soup he would have passed. I just served it to him and didn't say a word. One bite and he says "Um. Oh. Um". I asked him what it tasted like and he said "A cheeseburger!" Right on spot with those taste buds. Try it, you might loooove it! Let me know! Enjoy!

Cheeseburger Soup
* 1 pound super lean ground beef
* 16 oz chicken stock
* 1 pint half and half (can use milk)
* 1/2 block of Velveeta, cubed
* 1 large onion, diced
* 3 T. butter
* garlic to taste
* 2 med tomatoes, chopped
* 2 cups Iceberg lettuce, chopped
* Salt & Pepper to taste
* 1/4 cup flour mixed with 3/4 cup water (for thickener)
* sweet soy 1/4 cup (optional)
* several round -the -pot squirts of mustard
In a big stock pot, melt butter and sweat onion and garlic until translucent, remove. Add ground beef, season with salt & pepper and cook until browned and a bit crispy, drain. Stir in sweet soy.
Add your chicken stock, & flour slurry, bring to boil scrapping bits off the bottom. Add half & half, velveeta and onions and garlic. Cook on low to medium until all the cheese is melted, not boiling. Add mustard.
Season to taste and lower heat to low. Cover and cook for about an 1 hour.
+ After scooping up a bowl put the lettuce and tomatoes on top. Garnish with a cutsie little mustard swirl. I also add a spoon of relish because I'm a pickle freak.
Double Chocolate Chip Muffins for dessert.
You can't see the yummy, melting goodness in this dinky photo!
I cheated and used a package mix tonight. But hey, I did have to add chocolate chips, stir, scoop and bake.
Smelled pretty good in here while we enjoyed our cheeseburgers. You can see one was snagged before I could even grab the camera!
It's ok to take short cuts when you create!

Start the blog already
It's been almost three years since I wanted to start a blog. Well, you can see I didn't quiet follow through with it. One post in Feb 2008 and that was it.
So here I am again.
I'm cashing in a do-over. Thank God for do-overs.
I dub January the month of do-overs.
The year has turned and the world gets a do-over. A fresh start.
A chance to do-over all the things we are unsatisfied with.
To be more organized.
To loose more weight.
To craft more.
To stress less.
To show my family the love more often.
To work more on the relationship with the Mr.
To clean out all the messy hot spots in my home.
To live with less stuff.
You can see my do-over list can go on and on. But I'll spare ya...
I know you have your own do-over list.
I wish us all the stick-to-it-ness (is that a word?) we need to be happy with our do-overs.
